Half Moon Opera Cake

Happy New Year 2008 to you all!! To celebrate the new year I would like to prepare something special for the dinner’s dessert. I decided to make an Opera Cake. I like the taste of the coffee in a cake and RV love so much chocolate. So it is an opera cake gives good combination for both of us. As you know I am not a baker, this is my first complicated cake.  I was so happy that I can make this opera cake so well. I can’t even believe it myself :D!

NiaAfter all the preparation process now I understand why they call it Opera Cake. I think is because it is so long to prepare :D. Just like an opera hahaha. It took me 3,5 hours to finish all the process, but of course it is not for nothing! It was a so marvelous cake. Even RV thought I bought it in the patiserie :D. Thanks to Femina Online for the great recipe!

There are 5 steps in the prepartion;

  1. The Cake
  2. Butter Cream
  3. Chocolate Ganache
  4. Coffee Syrop
  5. Layering



  • 3 albumens
  • 4 yolks
  • 80 gr of all purpose flour*
  • 112 gr of sugar
  • 1/4 tea sp of baking powder
  • 25 gr of butter

How to prepare the cake:

  • Blend albumens until it grows. Add half of the sugar little by little. Keep blending until it is firmed. Set aside.
  • Blend yolks and add the rest half of the sugar until it grows, add flour and baking powder. Mix well.
  • Melt butter in a low heated skillet.
  • Add the blended albumens into the dough then mix well. Add melted butter and mix well.
  • Put the dough in a 28 cm pan.
  • Baked in a preheated oven in 180 degree for 40 minutes.
  • Cut the cake in a half (both horisontal and vertical) after cool it down.

*better use 100 gr of almond powder and 30 gr of all purpose flour, but I did not have it in my stock so I used only the flour.



  • 100 gr of sugar
  • 40 ml of water
  • 1 egg
  • 1 yolk
  • 200 gr of butter (blend until it is white and soft)
  • Mix 2 table sp of instant coffee with 1 table sp of boiling water

How to preapre the butter cream:

  • Boil water and add sugar. Set aside.
  • Blend egg and yolk until it grows, add sugar syrop (preheated if it is not hot anymore) and keep blending until they are mixed well.
  • Add the dough to the blended butter, blend well. Add coffee liquid, blend until they mix well.



  • 250 gr cooking dark chocolate (break into very small pieces)
  • 4 table sp of butter
  • 125 ml of heavy cream*

How to prepare the chocolate ganache:

  • Heat heavy cream until it boils, turn of the stove and directly put in the chocolates. Mix well then add butter.

* I didn’t have heavy cream so I change it with wheap cream



  • 75 ml of water
  • 35 gr of sugar
  • 1 table sp of instant coffee

How to prepare the syrop:

  • Boil water, sugar and coffee. Cool it down before applied to the cake.


  • Take one part of the cake, cover the top with coffee syrop. Roll up butter cream evenly then put over another part of cake. Put it in the refrigerator for 10 minutes.
  • Take out the first layer and cover the top with coffee syrop. Roll up chocolate ganache evenly then put over another part  of cake. Put it in the refrigerator for 10 minutes.
  • Repeat the same process until all the layers are finished.
  • Put the opera cake in the refrigerator before serving.

Serving for 6 big pieces (I am sure small piece is not enough for each person :D)

    but i just cant do grams…i need it in ounces and i really want to try to make it..you explain well but what is albumens.

  4. i don’t understand, it all becomes one quarter of an actual cake. how am i supposed to eat that with other people

    • Hi Lucy, if you follow all the instructions well you should have gotten 6 pieces just like written on the recipe. If you would like to share with a lot of poeple you should multiply the recipe by the number of people you would like to share with.
